					<description><![CDATA[making kimchi is an art..this is a fact...there are a lot of youtube clips and stuff but due to the huge differences with all the recipes and such it is quite hard for beginners to grasp the idea of making kimchi...
i know one thing that where you husband comes from, they use a lot of fresh seafood as in they might cut up a whole squid, fresh fish or octopus, uncooked and include that in the kimchi. as the kimchi ferments, the seafood ferments also and the seafood bits are considered a delicacy.
for people in Seoul, they don;t do this as much so every region and province has their thing.
also kimchi is not such a cabbage based thing as what people think since a lot of the unique and interesting kimchis are made with completely odd vegetables. for example, my favourite kimchi at the moment is Gat-kimchi which is made with purple mustard leaves and have a really crazy mustardy/wasabi effect when u eat it. ^^]]></description>

And I remember my mom&#039;s kimchi had lot of variations as well every single time. One time she threw away the entire winter kimchi jars because they tasted weird. ]]></description>
