So I actually have questions for both Hugh and Nic. Hugh - since your family lives in the country, do they kimjang every fall? If so, is it something you will discuss on the blog? Nic has mentioned being wary of kimchi making, so I was wondering if Nic has plans to learn from Mr. Gwon's family while in South Korea. Also, I am not Korean, but I have been making kimchi for almost two years. There's really nothing to be nervous about, but I thought this article on lactofermentation (how kimchi is made) might help address any worries you might have http://www.culturesforhealth.com/busting-lacto-fermentation-myths?trk_msg=2QTLGD2SAFJKLAU94T6U1RH0GS&trk_contact=N2FNIF7DNIHJPFD1KFMN7E9D4O&utm_source=Listrak&utm_medium=Email&utm_term=Busting+Lacto-Fermentation+Myths&utm_campaign=Newsletter&utm_content=12-4-13

Also, if you are really nervous about something going bad, you can always use a starter culture (like Caldwell's vegetable starter - until I got brave I always used it). Here are some links to my favorite Korean recipe bloggers:

http://www.insanitytheory.net/kitchenwench/authentic-traditional-kimchi-recipe/ - Ellie Won is a South Korean living in Melbourne

http://www.beyondkimchee.com/recipe/korean-recipes/kimchi-kimchee/ - Holly is a South Korean living in the US. She has some quick kimchi recipes, but cabbage kimchee (3-part recipe) looked like the most traditional one I've seen and is often the one I use.

http://www.koreanbapsang.com/2011/11/kkakdugi-cubed-radish-kimchi.html#.UqNSj8RDuSo - Hyosun Ro is also a South Korean living in the United States. I love her kkakdugi kimchi recipe! I've also made her recipe for seolleongtang, which is excellent!

I'm excited for you!

Wonderful news. I wish you the best of success and that it turns out to be everything your hoped for and more.

Also don't listen to any negativity. Win or fail isn't something you can judge by an 'end result' It is about the risk you took, the courage you used and how you braved it all. By those terms you're already successful. Still, I hope you get a 'happy ending' too. Once again, wishing you much prosperity.
